Parmigiano
Parmigiano Reggiano is of course renowned as a grating cheese. Also it’s a decadent delight when nibbling on a whole chunk as the cheese gently melts its umami-filled crystals, especially the 36 months Parmiggiano Reggiano. These “cheese crystals” or “flavor crystals” are the result of the fat and protein breaking down naturally as the cheese ages. It is also great in desserts accompanied with fruit such as pears.
